Growing up with family in Anguilla and the US, I have always had a love for the eating cuisine packed with flavor at a young age.
As I continued to move around the US, meeting people from different cultures - I would go out my my way to try specific dishes, often referenced as "Comfort Food". This peaked my interest, enough to attempt cooking like for like meals with my own twist.
